3. How it works
Basically, a classic wood-fired oven has igloo-shaped dome as well as an arched opening to allow for air circulation and the insertion of food. The fire, from food or otherwise, is pushed to the back of the dome so that the heat can pull in oxygen from the oven’s opening, allowing the heat to rise to exit through the chimney flue, creating a “d-shaped” convection flow around the dome’s ceiling.
The fire burns and can create very high temperature, up to 1000º F, while the shape of the oven allows heat to be retained in the walls. Of course, not everyone is used to managing such high temperature, but you will become more accustom to how it works and will learn how to manage your oven’s temperature.
